Whats the easiest boss fight that you have come across. They easiest one that I have fought so far was the final boss fight of Suikoden. That golden 3 headed dragon was really easy.
I'd go for the last dragon in Super Mario Bros. I mean, getting to him was massive *****ery, but jumping over him was cake.
Mmm not sure whether to tell if he's a boss. he is but it's not an RPG. I'd have to say Bison from Street Fighter. Thought he was fairly easy.
Bowser in Super mario Sunshine. No challenge there.

Majora in The Legend of Zelda: Majora's Mask. If you collect all 20 masks and get the Fierce Diety Mask, you can beat Majora (final boss) in about 2 minutes with no effort what-so-ever.
The spidery-thing in Ocarina of Time, the boss in the Great Deku tree. Even playing Master Quest it was easy, and I mean really easy.
The Grand Vizier on Prince of Persia: The Sands of Time. Really, I thought some of the battles with all the sandguys were a lot harder; especially when you fight the prince's dad.The first time I played it took me forever to figure out how to beat that guy, but I beat the vizier with no problem at all.
Ares of *** of War was quite easy. Well thats not saying much because thats on normal mode.

Mithos from Tales of Symphonia also. His last from was supposed to be stronger, but it couldn't block so it was incredibly vulnerable. And if you have Lloyds devils hands weapon then he is easily defeated.
Shadows of Undrentide had an extremely dissapointing final boss. I was expecting that it would be a sort of teaser fight before she retreated and you fought her a while later. But no, she just dies and you win. Not only way too easy, but way too anticlimactic.
I would have to say that last dude in Need For Speed Underground 2. I beat him by over a minute, but the difficulty was normal.
FFIX final boss, Necron. No explanation needed
I mean, I usually can't get to the final part of Final Fantasy games, let alone final bosses. IX was way too easy.
Super Mario Sunshine's boss of Bowser in a bathtub was far too easy. Is it just The Hammer, or does Bowser get bigger and easier every game?

The final boss in Perfect Dark Zero was pretty **** easy.
Sigma in MegaMan X6 when playing as Zero. He opens his mouth once, and you can take off 3/4s of his life bar.
Yu Yevon. It's impossible to die (auto-life is automatically casted on each of your characters), nevermind the fact that he casts curaga on himself. If you cast zombie on him, the battle is even more boring.
The finial boos for Return to Castle Wolfenstein...
All you had to do to beat was cericle him and keep fireing, he dosn't have a gun of his own. He can pull you towards him, but oce you are upclose it is easy to get away... The ending to that games was very dissappointing...
I managed to petrify Sephiroth once. That was a pretty easy fight. (Omnislash, followed by Highwing, followed by 4x cut from tifa with Added Effect- Hades in her glove. 3rd hit petrified him.)
Necron was just too easy.
But I'd have to say that the final encounter of Blue Shift (Half life mod) was rediculously easy. All you have to do is plant a remote mine near a door, and blow up all the soldier at once. Problem solved, game ended.
My first thought was Bowser from Super Mario Sunshine.
Although Gannondorf from Wind Waker is also worth mention.

Ridley in Super Metroid. He's **** easy, really. Unless you want the actual final boss, in which case I'd say Mother Brain from the same game. Doesn't really count, though, you're not supposed to lose.

That was the easiest. Ever. It was still a great game up until then.
Li-Grim from FFTA. I beat both of it's forms in one combo each. Heck, even Llednar was tougher than it/her.
Of course, Marluxia (from KH:COM) was pretty easy, but at least it posed some sort of a challenge.
Well, human form sephiroth in FF7 is technically the last thing that you kill in the game, whihc seems to make it the final boss. And win no matter what, I'd nominate him.
Sephy(FFVII) or Mithos(ToS).

Zeromus from FFIV was easy, in the original and Advance version.

The final-final boss fight in Xenosaga Episode II. All he does is taunt the entire battle.
Aside from that... I'm not really sure. There are a lot of incredibly easy final boss fights.

Ganondorf from Wind Waker. He was quite hard in Ocarina Of Time, must have stopped going to the gym or something since then.
And Chaos from Sonic Adventure. More about showing off the Dreamcast's then-brilliant graphics than providing a real challenge.

Also, he has a ton of HP, in fact, Ansem was probably easier than Marluxia to beat (at least for me). Or Riku is just incredibly tough...
Ok well this wasn't really a final boss fight but heres what happend in the game fable you have a choice, at the end to either keep the best sword in the game and kill your blind sister, or throw it in the vortex well i kept it and found out there was still another fight i had to fight whats her face's big bro the big black guy well, everytime you take his health down so much he will run to a different area well the sword i had i only had to hit him once each time then he would move to the next screen and i beat him and that was the last guy i faught in the game but it wasn't really the one that was suposed to be final, i would i have to say when i was 14 i rented a game called bionicle and i liked it because of the lego it was the worst game in the world, beat the game in litterally 1 hour the boss's name at the end was makuta beat him way to easy basicly just hold down on the button and it will kill him.

Dr. Breen from HL2. I thought that there was going to be some sort of big alien or something coming through that portal. But no. The game just ended and left me there asking "wtf?"
Lord Saddler from Resident Evil 4, as far as recent games I've played. The game has an excellent difficulty curve, which spikes considerably during boss/mini-boss fights, but Saddler was such a piece of cake, it made me wonder if Capcom didn't have enough time to flesh out that battle better. I wasn't even concentrated on killing him, and was actually expecting to die a couple of times before "figuring him out," but it only took one half-as[color=yellowgreen]sed try to beat him.[/color]
Yggdrasil from Tales of Symphonia.
Not only was it hideously easy, but it screamed of "rushed rushed rushed". At least the music was cool.
That final boss thing from bubsy. I remember my sister beating it and all she had to do was fly into it, pressing left & right. It died in less than 7 seconds.
The final boss of Ratchet & Clank: Up Your Arsenal was really easy when he got in that big robot thing. All you had to do was move left to right, hold down the fire butten and you win.

If you watch his movements closely and have a giant's knife/biggoron's sword, he's one of the easiest bosses you'll ever fight.
[spoiler]When he goes for a slash he stands up straight, you can walk through his legs and jump slash his tail. Even if your giant's knife breaks, you can still use it and kill him just as quick. As soon as you get the master sword it makes this twice as easier (you can block better in case you don't get through his legs in time). I reccomend staying as close as you can to him, which will give you more time to do this.[/spoiler]
The easiest Final Boss Battle would have to be fighting the airplanes ontop of the Empire state building in King Kong. It was very easy and all I had to do was hit the airplanes. Though, I can't say I didn't enjoy it. =] (Can I post pictures?)
FOO's the easy boss fight was the end boss fight in The New super Mario brothers.
Baby Bowser and regular bowser.
A) You didnt even need to kill them , just press the button and make them fall.
B) You could mega mushroom and kill both in three seconds.
C) You could fire flower them and beat them in five.
Easy easy easy.
At least Mithos in TOS required you to be corherant, I beat bowser in my sleep.
and IMO the last fight in Wind Waker was more cinematic then actual fight. The Pupet dude was way harder.
Old school games, Bowser, but on a more up to date scale, Xemnas on KHII. It took like an hour to beat him, because you gotta fight him like 5 times, but he was easy.
Sephiroth and The Devourer of Time in Chrono Cross.
Sure, OOT was easy, but Ganondorf in Wind Waker made me laugh. And Cry. It was so pathetically easy. :(

Considering I've played more games since I've last answered, my new answer is the Emperor from FF2. I don't see how anyone could possibly lose to this guy. Give Firion the Blood Sword and the Masamune, have everyone else cast Beserk and Haste on him, and Firion can easily do 5000 damage per turn with physical attacks. The Emperor's attacks? Please. His physical attack is brutal, but he rarely uses it, and his spells don't do more than 1000 damage to any character. 15000 HP doesn't seem like that much when you've beaten him by turn 4.
Come to think of it, virtually every Final Fantasy game is way too easy.

The these last few year I have been playing games and leaving scores on my friends website and I've played almost every major american release video game. So I can easily say for me, the easiest two final Boss fights ever, where. Either Devil Maycry 3's Mundus & Resident Evil 4's Lord Saddler even on the hardest settings I easily maganaged to beat them (capcom need's to rethink there difficulty systems). Saddler was quite easy expecially since one could put him down with only a knife in his item case (Mine was completely emptied out, I don't even believe I had to place any green herbs in there)?
Honerable Mention: Metal Gear Solid 3's Origonal Big-Boss, she was sickningly easy (that is after you figured out the exact order of which to fight her).
